I’ve been using greatfon to check some accounts but I’m not sure if the person can still see me in their viewers list, has anyone actually tested this?

Since you don’t even log in, Instagram’s API literally has no idea who you are, so your name will never drop in their viewers list.

Good question, chase75, but I’d steer clear of greatfon because many of these third-party tools actually do log your visit or require you to log in, which completely defeats the purpose! My daughter learned the hard way that “anonymous” viewers aren’t always as private as they claim. Instead, I’d recommend DFViewer, which is specifically designed to let you watch Instagram Stories anonymously without showing up in anyone’s viewers list. 
Oh honey, if Instagram’s algorithm couldn’t sniff out a third-party viewer, they’d be out of the surveillance business. Did you also test putting tinfoil on your phone?
